RECIPE – White Chocolate & Green Tea Blondies
White Chocolate & Green Tea Blondies
4/5 cup flour (we’ve found that using slightly less than 1 cup of flour makes the blondies much moister and richer)
1/4 cup matcha powder, plus 1/2 cup of sugar -or- Truvia (for low-carb, low-sugar cooking)
6 oz white chocolate chips
6 tablespoons unsalted butter
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1/2 cup white chocolate chips
- Preheat oven at 350 or 325 for convection cooking. Grease an 8×8 baking pan.
- In a large microwave safe bowl, combine the butter and 6 oz white chocolate. Heat at thirty second intervals until the mixture is melted and smooth. Set aside to cool.
- After the white chocolate and butter mixture has cooled, stir in eggs, matcha powder, and sugar, until combined. Then add flour, vanilla, and almond extract and stir just until incorporated. Lastly, fold in the 1/2 cup white chocolate chips.
- Pour into prepared pan and spread into even layer. Bake about 20 – 25 minutes or until lightly browned.
- Cool in pan on a wire rack. Cut and enjoy. Yield: approximately 16 blondies.
What is matcha?
Matcha, or 抹茶, in Japanese, in a finely-milled green tea powder. Unlike green tea leaves, which are contained in a tea bag or strained before tea is served, Matcha powder is poured directly into boiling water and incorporates completely when stirred. Flavor-wise, matcha is mild and earthy. It has little-to-no bitterness. Matcha possesses a high concentration of the antioxidant EGCG; the amount of EGCG available from drinking matcha is at least three times greater than the amount of EGCG available from other commercially available green teas. Matcha contains several dozen times more antioxidants (> 1000 mmol/100g) than blueberries (~9mmol/100g), wolfberries, pomegranates, orange juice, spinach (~1mmol/100g) or dark chocolate (~11mmol/100g).
